I don't think you can rename, but you can create a new Consistency Group and move the mirrors over. You would just remove the mirrors from the Consistency Group so that they are independent mirrors, then add them to the new Consistency Group.
The risk of this is that while the mirrors are not in the Consistency Group, and shortly after adding them to the new one, the LUNs may not be consistent with each other. To ensure that the remote target's remain consistent, set the independent mirrors to Manual Update before removing them from the group. Then once they are independent they will not initiate an update. Add them to the new group and set the update interval on the group and you should be back in business.
Mind you, this is based on my memory of dealing with this back in February. ;-)
