Yes, the BIOS option of CTRL+C to enter the SAS Configuration appears to be much more straightforward. I was able to create two RAID-1 configurations among my 4 drives. Maybe I'll see what path this takes me down. Have you tried this and run into problems?
I have always created them in bios. Not very plug and play when you have to down the O/S indeed. But the ESX Dell management stuff is really difficult to get working. I gave up.

I got the same issue but now I can fix this problem.
First, I try to create to a group of Disk Array the same you have done above.
Second, after created one already, you have to reboot and then Ctr+R, you will see a virtual disk of group array that just created is synchronizing.
Third, you go to Controller 0 at the top and click enter key, you will see another available disk to create anther array.
