There's a table of compatible CPUs in the G5 5090 Setup Guide.
What size PSU do you have now: 360W, 450W, 500W? The PSU in this model is customized and can't be upgraded. The larger PSU versions may not be available as a "spare part" from Dell.
You probably will need a better heat sink and bigger fan(s) if you get any "K" or i9 CPU which use 95W vs the other CPUs at 65W.
Lots of threads about upgrading/adding new fans and better heat sinks in the 5090, so search for them.

I have the 360W. Does that prohibit me from upgrading?

Don't think that prohibits you from upgrading, but I'd stay away from CPUs that require more than 65W...
