Hard Drive upgrade then RAID Config Question

I currently have two Toshiba 250gb Hard drives in RAID 1 (I like protection).  I purchased, from Dell, two Momentus 500gb drives.  Can I image the 250gb, install and configure the 500's (RAID 1 again) and push the image to the new drives?  Any other ideas since I do not want to spend 3 days reloading, configuring and registering my software again. I just reloaded the software for Dell Support a short while back.
