Just picked up a refurbed version of this model for a song. Has 8 GB of RAM but the 32-bit Win 7 Pro installed. Is it as simple as just booting from a Win 7 install disk and doing a clean re-install and choosing 64 bit installation option?
Yes, you would require a Windows 7 PRO 64 bit version disc to clean install the operating system on your system and then please enter your system service tag # on the link below, select the OS, then download the necessary drivers listed under appropriate section onto the system and install it.

Yes, it will. That said, it requires a clean install - you cannot upgrade 32-bit to 64-bit Windows.
