I have done this configuration several times and have not faced this problem. Are you using the latest build I think 278 for this? EMC Support told me that module version 5.1 had issues especially recovering data, so it would be good to use build 278 for it.
I doubt this problem is caused by the NetWorker Module for Exchange, so upgrading to latest version might still have the same problem.
First of all, we need to find out if this issue is related to the Networker Module for Exchange or not, as the NetWorker Module for Exchange uses the Microsoft Exchange API to perform backups and restores.
What are you trying to backup when the mail services crash? Brick level backups or Information Store backups? Which specific service is crashing?
I have seen a similar problem but happened during file system backups because the Exchange Writer had a problem during a VSS backup, and this turned to be a Microsoft patch that needed to be installed on the server.
If the problem happens while running an Information store backup, does a backup with ntbackup succeeds without crashing?
If ntbackup works correctly, you may want to try another backup while you have your antivirus disabled.

I turned off VSS backups and it works.
I'm still looking for the MS patch to fix the issue for VSS backups.
