Are all the switches connected together? If you only have one connection "out" to the Internet (for example, through a router or firewall), then you really only need to monitor one port on one switch: mirror the traffic between the switch and the Trust/LAN side of your router or firewall; and copy that traffic out another port on the same switch to your sniffer/monitoring device.
