Migrate old OS and data to a new server?
I have inherited the care and feeding of a PE800 with SBS 2003 that is in my wife's office.
It will go off warranty in the fall - dell will not extend the warranty beyond that. I would like to purchase a new PE but keep SBS2003 and all the old data, applications, etc.
Is this possible? How can it be done? Will Norton Ghost or Acronis True image work?

Acronis (and others) has the ability to migrate servers from one hardware base to a new hardware, not cheap though...
As a plug to starting from a fresh install, then porting over data, this leaves you will a pristine machine, leaving any problems the old machine setup had behind, though it is much more work

Way prefered method by myself?
Buy a new Server (host if you will), load ESXi 4.1 on it and perform a Physical to Virtual conversion on the current PE800.

Should have really read "load the hypervisor of your choice and perform a Physical to Virtual conversion on the current PE800."
