I tried playing around with Google to look for an R510 motherboard, but they haven't yet gotten to non-Dell parts resellers yet it seems. For the R310 I found 1 hit on Ebay for a very reasonable price.
You may just be better off buying a new R510 and moving some of the hardware over (memory, processors, drives) if you can't find a board for it. Could you maybe put in a claim with your insurance for the damage to the server to get some of the money back for buying a new server?

I originally found it via Google, but going directly to Ebay I had to widen my search to "Dell R310" and sort through them a bit. I luckily remembered the price of US$ 130, so sorting by price made it easy to find.
