if i create two new volumes and add the drives to them in the order they were on the original card, is there a chance i can access the data if i don't initialize?

The steps you have already taken risk data loss. Yes, there is a chance that if you create a new array on the PERC5 the data will be lost.
Nothing you are doing is supported.
The H310 is not supported in the 2900
Drives larger than 2TB are not supported on the PERC5
RAID migration from an H310 to a PERC5 is not supported
If you want to try to bring the array back online I suggest that you stop using the PERC5. If the H310 has failed then replace it with another H310. If you would prefer to use a different controller then use something like the H710 that supports migration from the H310. Keep in mind that the H710 is also not supported in the 2900, so I'm not sure if that controller will function correctly.
