It is best to move the H800 to the new server to ensure that you can access the data without any issues. I am guessing that your new server is a 13th Generation server & only supports an H830 controller?
No it is not officially supported that the virtual disk configuration will be seen correctly on the H830.

If I connect the MD1200 to a different H800 will the H800 get the configuration from the drives so I can access the data? If so do I need to match firmware versions on both H800's? I imagine that this should be officially supported for when a faulty H800 needs replacing.
Yes if you connect your MD1200 to another H800 the configuration can be read from the drives to the new H800. It is best to match the firmware on both controllers to ensure that there is no issues.
