The link you provide points to snmp and cim configuration.

As I stated, these devices are NOT snmp nor cim capable.

In ITA 7, I had these devices under the 'Unknown' category, in ITA 8 they do NOT show up under the 'Unknown' category.

I want to know how to get these devices back under the 'Unknown' category?

Could you kindly confirm whether you configured ITA to discover " All Devices" and not " Only Instrumented Devices"? This setting is available in the Discovery and Monitoring-> Discovery Configuration... dialog.
 
Since you mention that your devices are neither SNMP nor CIM capable, and ITA is not even listing them under Unknown, I guess you might have configured ITA discovery setting as Discover "Only Instrumented Devices". Try changing it and perform a discovery again on the range... see if it works.

It is set to discover all devices

Are you sure you haven't turned on a firewall that is preventing ITA from discovering the devices?
 
Try running Ping test from Troubleshooting tool of ITA. Does it pass?

both the name resolution and ping tests complete successfully from the trobleshooting tool
