Best RAM setup for 9570 i9?
I see a lot of options out there for DDR4...

Dual rank just means chips on both sides of the soDIMM, while single means one-sided. Either will work if otherwise supported.
The RAM won't run any faster than 2666 - so no need for anything faster.
