Should I even get the XPS 15?
I was going to get the XPS 15 (this model: * i7 8th gen * 8 gb ram * 256 gb SSD * NVIDIA GTX) but after reading through the negative reviews on this subreddit, I'm having doubts. I need it for coding, video editing, maybe let my cousins watch videos and play games on it, and it seemed like a pretty good deal— if I buy it now, I'll save 300 to 400 bucks (buying at 1700$). Should I go for it or no?

In my opinion no. The software support by DELL is pretty bad. A decent amount of drivers are broken and usually it takes months to fix. Lates bios update bricked a good amount of devices.
The laptop is a good machine, but you need to pray that some sofware engineer at Dell does not kill your machine remotely.
