In case I have a VMware server with several Windows Server 2008 VMs on it, for example 6 VMs. My question is can I RDP into more than 2 VMs at the same time through one NIC?
Yes - VMware isn't involved here at all. Each VM has its IP (or IPs) and if you have a client utility that can login to multiple RDP sessions, VMware can handle it.
