The PERC 3/di RAID controller does not assign a drive as "master" and "slave".  A drive is either a sync'ed part of the mirror or it is not.  If a drive is a member of a mirror is has a full redundant copy of all data.  You will not need to assign a drive as "master"...
 
As far as your process listed there are a couple things you should be aware of...
 
1. When you remove a drive in step 2 you will not need to restore any data.  Unless you remove both drives from the mirror the data will still be available to the OS.
2. When you reinsert the drive the drive will be marked failed and after about 30-45 seconds the drive will start to rebuild.  (rebuild means it is copying the data from the online disk to the rebuilding disk)
3. A true failure scenario would be something like this...
 
1. Back up data...
2. Pull both drives from the mirror (yes your system will crash)
3. Install a different set of drives.
4 create mirror
5. Install OS.
6. Run a restore to make sure that it completes without error.  If an errors happen during the restore install one of the original drives in the system and make sure you can still boot off it.
 
FYI when you do item 6 remove the "test" drives and only have the original drive in the system...
