I currently do not have the Continuous Availability option set on my shares. Does this mean the SMB clients will definitely lose connectivity to the share during an SP reboot or crash? If so, I definitely need to enable this option?

Clients will not lose connection at all with Continuous Availability enabled. Trying to determine if I should set this on or not.

I would suggest to try both and see whats better for your environment
We usually recommend it when SMB shares are used to host Hyper-V machines or databases
