What is the best way to temporarily remove a TS/RDS from accepting connections?

Not sure what the best method is ...here are some ways

Remove the TS role in the vws console (if you have only one server for a managed app then your users will get an error when connecting)

Remove managed app assignments

Move to alternate folder (if you use folder assignments with managed apps)

I am interested in what others suggest to temporarily remove a TS from the farm.

In the Terminal Server 'Properties' wizard, disable 'Accept 'least busy' connection requests' under 'Connectivity' UPDATE: OK, so I was wrong on the 'Accept 'least busy' connection requests' check box - that's for use with Proxy-IT, an alternative solution for load balancing without the vWorkspace connectors but with straight RDP clients. Adam Dresner's response is the correct way to handle this: use the Enable/Disable Logons item in the right-click menu on the Terminal Server/Session Host you want to drain.

In the management console, right click on a terminal server and select 'Disable Logons'.  To re-enable, select 'Enable Logons'. See:
