Most likely it's not going to fit. Most AIB cards are too long to cram into the R12 case, even with the front fan removed. There's some posts on here with the details on the max size and some examples of a few cards that actually fit. You can search for those posts, or I'm sure someone will be along shortly to give you the details here. It's a commonly-asked question. Lot of GPU-less Alienwares on the market lately.
I bought a water-cooled R11 without GPU just a couple of months ago. I have an interim Zotac GTX 1070 mini that's working really well. Didn't have to touch secure boot. Waiting to upgrade when prices make sense.
You've got 280mm of space to play with. That's with the stock air intake fan and its mounting frame. Some people have replaced it with an aftermarket fan and gained some extra room, airflow and silence. But from what I've seen can also throw a BIOS error upon boot.
Anyway, the cards you see listed are built to Dell's specs, including size. Since it's cramped inside the Auroras the cards need to be made small.
Chances are with a 3 series Ampere card you won't need to disable secure boot in order to POST. The problem is, if you do get boot blocked, the only way to disable secure boot is to have working video. And you would not have working video if you are encountering this issue (you won't even be able to boot) so you wouldn't be able to disable secure boot. Older models used to support booting from onboard graphics, if chip supported, and you could easily get around this issue while you updated the GPU firmware to support booting with secure boot enabled (I've used this workaround several times on my PC when I got new secondhand cards). Unfortunately the R12 does not support this.
Thanks to everyone that has already replied. I have confirmed the size of the card "should" fit. The EVGA 3060 I am planning to use is 8 inches. Should fit within the 10 inches of space available. So I'm not super worried about that. I am worried about whether it will POST without issues or if I will need to figure out the Secure Boot situation. Anyone with more concrete details?
Here is a link to someone with an R12 and aftermarket 3060 installed. Perhaps you could reach out to them to ask if they had to change any settings on the PC for the 3060 to work.

Cards that are too tall wont allow the cover to close or the crossbar to be used or the contraption to close without hacking out pieces with TIN snips.

This is the way it's suppose to work.
If the after-market Nvidia card physically fits, and has enough power (usually just means that there is enough existing correctly-pinned PCIe-Power cables) ... it should work.
But some users sure seem to have trouble. Never really understood why.
Zotac cards are historically just good/simple Reference-Design cards. And hard to beat a good-ole GTX-1070 GPU.

11 inches is 280mm aka 28 CM
Full size 12 inch cards require removing the fan.

Single or Dual fan Short cards seem to be fine.
