Get a single AMD video card (6870, 7870, or 7950).
Skip the Sound Blaster and use the on-board sound. Intel i7 has more than enough power to run the on-board Realtek sound chip.
Anyway, the better gaming headsets are USB (which means they have their own "sound-card" built-into the cord).

Agree with Tesla, I have a single GTX 580 and it rocks. I also use a G35 headset and the sound is awesome. Not a big AMD fan but to each their own.
