The heatsink on your current CPU is only good for CPU's upto i7 3820QM.

If you go for the high end CPU's like 3920XM or 3940XM you will need a triple pipe heatsink, ATM you only have a single pipe hinksink and the high end CPU's are to much for it.

Triple pipe heatsinks are around $75US on ebay

Artic silver 5 is the most user friendly/high quality around, there are others like IC diamond etc , but they can be a bit difficult to apply.

Windows 8X means windows 8/8.1 - The "x" is the generic symbol.

Keep your original CPU fan but make sure to brush both it and the heatsink fins out with a soft stiff brush, a cheap NEW paint brush is good enough.

Keep in mind the BEST OS for games is windows 7 - Windows 8 is OK but there is a drop in performance, especially with GPU's, forget about windows 8.1, it is a nightmare for performance, sort of like permanently speed limiting a F40 ferrari to 75Km/h

Dell will tell you the only GPU's for your model are the "6" series NVidia or the "7" series AMD's - You can use more than that, just checkout notebookreview forum for some idea's and instructions

On regards to the processor there is no need to swap the fans at least you are facing overheating issues  however I will recommend you  to put new thermal paste as soon as you swap them.

And related to windows question yes, 8X means different windows 8 versions and UEFI simply means the boot mode.
