You get an APRICORN DRIVE WIRE and clone the old to the new if its a new blank hard drive.

You F12 boot the CD that comes with the kit and clone the old to the new drive.

The software that comes with Apricorn Drive wire works fine up to windows 7.  The latest version of the software works with windows 8.

Norton Ghost only works up to 7 also.  The current version of acronis claims to work with windows 8.  The reason I like the drive wire is that you get a bootable CD and dont have to install anything.

The smaller cases do not have mounting or power connections for a 2nd drive.  You could remove the optical drive and put one there. The Esata port could be used for 2nd drive.

How would I be able to transfer the data on the original hard to a new one if I can only have one in at a time?

Microsoft's representative Gabriel Abu has stated there will be not cutoff for Windows 10 Insiders. If you are running Windows XP or Windows Vista install the Windows 10 Insider Preview instead and use it to migrate to Windows 10 RTM on the 31st of July 2015:
