Initially, the computer was not picking up anything from my headset when I talked into it.
You said these are recent issues. Did the headset ever work? This is a headset with 2 plugs right, one for the headphones and one for the mic?
Then, I uninstalled the IDT audio driver in hopes that it would fix this issue. Instead, a few new problems arose. The computer installed some of its own drivers
It seems that you caused Windows to install its native audio driver. The native driver is basic and generic, so when using it not all of the audio hardware works. Go to the Sound properties. If it says "HD Audio Device" then you have the generic driver. If it says "IDT HD Audio Codec" then you have an IDT driver.
If it is the native driver, I would suggest downloading and installing the IDT driver again, and test the headset before making any configuration changes. Test using Windows Sound Recorder instead of a voip program to eliminate configuration errors. Make sure that Jack Mic or whatever it is called is selected as the default recording device on the Recording tab. If the mic still is not working test it on another computer.
Ideally, I would like all audio to be directed into my headset. I want the headset to pick up what I am saying and to allow me to listen through it.
If you can get the headset to work, then for you to be able to monitor the mic you have to select its properties from the Recording tab (lower right corner in the picture above). After clicking properties, then select the "Listen" tab, then check the box to "listen to this device".
The headset definitely works. I've tested it on other devices and there is no issue.
I downloaded the IDT driver again and reinstalled it. I'm back to my previous issue. I can hear out of my headset, but neither microphone works. The internal mic seems to be picking up sound but absolutely no sound is being picked up by the headset microphone.
I see that both your mic jack and headphone jack are set to be the Communication devices. You should disable all communication devices and set the mic jack to be the default recording device and the speakers to be the default playback device with no Communication headphones (disable that). Then your headset might work. the internal mic is probably a separate problem.

On the Recording tab does it still show "Microphone/Line In"? I think it defaults to line-in. When you plug into Microphone/Line-in you ought to see a popup dialog box where you select between the two. A mic won't work when the jack is configured for line-in. Go to Control Panel>IDT and see if there is an option to allow popups. I don't know exactly what the IDT options are for your model.

To be clear, there is nothing wrong in the speaker department. Playback is 100% working perfectly.
Internal mic is picking up sound, but it is not being received by the other party.
Line in is not picking up sound at all.
