You would need to contact our Support Desk and send them the logs for us to be able to troubleshoot what could be going on here.
With that said some USB Drives and ports can function slower and cause issues with the DISM process to mount and modify the WinPE Boot WIM file. Sometimes using a different USB Drive and or port can resolve those types of issues.
With the "/iso" switch failing on the DVD Restore Architect we would need the logs to begin to look into that issue as there could be a number of different problems causing that result.
We are currently working on created more detailed Hyper V and Virtual Machine documentation to assist customers with some of the common issues that we have run into using VMs.
If you can contact our Support Desk and send us the logs form the system that you are seeing the issue on we would be happy to see what else we can do to help address this issue with you.
It could also help to make sure you do not have Antivirus software installed on the system you are attempting to create the USB or ISO from, as there are known issues with some AV software and DISM.
