Backup should be your first action. You'll almost certainly need another system and whatever hardware to connect the drive to it -- either a 2.5" SATA to USB or NVMe to USB adapter. Backup online could also work -- if your have a fast upload network connection (i.e., fiber -- not cable model or DSL).
Running a hardware diagnostic test helps you identify potential hardware failure. Dell laptops, desktops, all-in-ones, and Windows-based tablets have an integrated diagnostic test that is called the SupportAssist Pre Boot System Assessment or Enhanced Pre-Boot System Assessment (ePSA).
NOTE: If the diagnostic test fails, make a note of the error code and validation code that the diagnostic test provides. This helps Dell Technical Support to identify which hardware component is causing the issue and provide repair options.

Thanks for your replies guys.
Actually the problem would have been easy to solve if I didn't try so many boot changes first.
The last update change a UEFI setting from ahci to raid. Just change it back to ahci and everything will go well.
I went for a fresh new installation and once the last updates happened, the problem came back and I solved it as I explained.
Thanks for this weird update Dell ... I had fun for a week and still is reinstalling some programs ...
