S2721DGF, different resolutions support?
I recently purchased the Dell S2721DGF for my computer. But I also have both my consoles connected via HDMI to the S2721DGF. The consoles can only output a 1080p or 4K image (Switch and PS4 Pro). I want to know if the monitor scales 4K to 1440p? Lastly, if there is any way to show native 1080p content without stretching the image to fill the screen?

The source device (Switch, PS4 Pro) is the primary and the monitor is the secondary. The communication goes from the source device to the monitor, not the other way.
The online S2721DGF User's Guide page 14 shows the supported "Preset display modes" resolutions and Hz. These are saved in the S2721DGF EDID (Extended Display Identification Data).
The S2721DGF is not going to "read" the source device (Switch, PS4 Pro) and assign (scale) itself an acceptable resolution.
It is the source devices operating system (Switch, PS4 Pro) responsibility to "read" the S2721DGF EDID and then to assign an acceptable resolution to send to the S2721DGF.

To be clear then, are you saying that if the source maxes out at 1080p then the secondary device resolution cannot display 1440p?
I think I have a related question, but will need a more defined yes/no/depends answer format. My Dell S2721DGF is connected via HDMI to my 13 in MacBook Air running Big Sur. I'm trying to customize the scale so that icons & text on my Dell aren't so spacious / I can fit more windows/text on screen. My research on the Dell S2721DGF suggests it is capable of displaying tight, crisp, clear text and goes much higher than display resolution it's maxing out at : 1080p or 1600 x 900. Is it limited to this because my "source device" is so limited? Or is there some way to customize my display to make it scale smaller than that if I continue to use my modest MacBook Air as output source?
