You can setup the switches with connections for redundancy, to ensure that STP is blocking the ports you want them to block, you will need to manually set costs.

How are your server NICs configured?

The interfaces of the servers are configured for manual mode, and are not specific to any parameter, only the default.
I will check the documents and will return with the result.
