Video Card won't fit
I just got an EVGA video card for my Optiplex 780, but it is too tall to fit. I contacted EVGA support and they said I can mount it sideways with a cable or bracket. Problem is, I don't know what they are called, or which one to use. Can somebody tell me what they are called and which one I need for my computer? A link would be nice, but not necessary.

Get a single slot card. The 8800GT is still capable of running most titles at 1080p, however only supports up to DirextX 10.1 and the common 512MB version's low memory can't run much other than Skyrim.
The 780 is too old and slow for any Pascal cards, and I'm afraid the only real options there are the GT 1030 or a GTX 1050Ti "Low Profile". Any higher than that and you'll see some severe bottlenecking due to bus width limits and PCIe 2.0 restrictions.
I got a Radeon R9 280X to fit in my 760 with a Q9550 and 8GB of RAM, but I had to devise a custom solution which involved mounting a Hyper 212 with custom brackets and a really janky fan setup.
XFX makes an RX 460 4GB that's single slot and works off of PCIe power, although I think the limit on the 780's PCIe power draw is 75W and you could harm your motherboard if you go higher than that.
Here's a list of manufacturers with decent single slot cards:
Elsa GTX 750Ti
Elsa GTX 1050Ti
PowerColor Radeon HD 6850
Inno3D GTX 1050Ti
AFOX HD 6850
Quadro M2000
Quadro P2000
Sparkle GTS 450 1GB
HIS RX 550
The EVGA GT 640 may or may not fit, your best bet is any of the above if you can get one for a decent price. Don't pay more than $180 for the 1050Tis and don't pay more than $100 for any of the rest except the Quadros.

The 780 doesnt have a full size riser like the 760 or 755 did.
Thats not an option.
You could try the UGLY option but its not supported.

So even if I get the GTX 1050 to fit with an extender, it will harm my computer?

You should be fine with any 1050 or 1050Ti that does not require external power plugs - the 1050 and 1050Ti both have a load-line power draw of 75W. Even then, if you pick a card that does need supplementary 6 or 8 pin connectors, power will come from that instead of the PCIe slot.
Honestly though the 750Ti is a better match and they're like $40 US.
