T310 w/H700 RAID1/2, 650GB SAS -> 2, 2TB SAS
- The server is a T310 w/H700 controller.
- It has a RAID1 comprised of 2, 650 SAS drives.
- I want to expand that to 2, 2TB SAS drives.
Can I simply replace one drive, wait for the raid to rebuild, then replace the other drive and wait for the raid to rebuild, and then expand the volumes?

Yes, but you need the latest firmware on the controller. Update iDRAC/LCC and BIOS first, then the PERC driver (if there is one available), then the firmware. (You should then update other system firmware).
You'll need to do the reconfigure in OMSA in the OS.
