Get a workstation ... they support Xeon processors and server hardware, but also support a wide range of graphics cards and client operating systems (Windows 7/10/etc.).

Unless you need it to be rack-mounted, I second the workstation suggestion.

Workstations have Server Grade hardware (i.e. Motherboard, RAM, Processor and PERC) so you get to take advantage of the increased reliability of the hardware and the different driver sets, BUT they are built for a single user, so you get more USB ports, a quieter computer, and smaller footprint. 

Another reason to get the workstation instead of a server is licensing for software.  Windows 10 for workstations is a lot less expensive than server 2019.

Also a lot of vendors will charge more when they are on a server rather than a workstation too.

 

The only disadvantage to using a workstation instead of a server is the amount of Drive bay options.  If that is the case, do as I did and get a r700 series XD server.  the r740xd can have 12 LFF drives in front and even more in the middle of the case.
