The ideal amount of memory is going to be dictated by what you intend to do with the server. If you can share that, the community may be better able to make a recommendation. As for RDIMM support, I am seeing register DIMMs in my validated parts list.

We intend to install a NFS server not to loaded of clients requests, about 50 users client, 2T of storage.

File servers don't normally rquire a whole lot of memory, I'd be looking at something around 8GB, depending on the operating system requirements.
