The S100 isn't seeing any virtual disks, because your drives are connected to the H200 RAID card. The S100 is the onboard RAID solution, tied to the onboard SATA controller, a Dell version of Intel's Matrix RAID. It should be turned off if not being used.
Thanks. It's v.1.6. I'm trying to install Windows server 2003 (R2 with SP2). The readme says it's v 1.6. The download file is cdu_1.6_core_173_A01.iso. The error I get from the SBUU is "..kernel panic..VFS: unable to mount root fd on unknown" and it happens when I select the first option of the utility.

It has Windows 2008 and at the bottom it says..to install the windows 2003 compute cluster edition, select windows server 2003, sp2, which is strange because it's not on the list. I'm staring at the options and I don't see it. Any recommendation?
Initially, Dell did NOT provide 2003 support on the 210 II at all. This was evident by the fact that no 2003 drivers are offered on the Drivers and Downloads page of support.dell.com for that model. A few weeks ago, I noticed that Dell's OS Support Matrix lists R2/SP2 as "Supported" on the R210 II and the FTP site has 2003 drivers. It may have unofficial or incomplete support for it, including no OpenManage support (SMTD/SBUU/OMSA). SBUU lists the R210 II as supported and lists Server 2003 as supported, but not necessarily BOTH on all machines.
You are going to have to install 2003 directly from the OS media, loading the RAID/storage drivers at the F6 prompt during Windows Setup (or using a deployment utility, like nLiteOS.com, to integrate the drivers into the installation media).
Thanks ...a bunch....I installed with nlite and it worked like a charm! I can't seem to get the ethernet controller and sm bus controllers to get installed. I downloaded the NIC driver (Intel Intel PCI-E 10Gig and 1Gig Family of Server Adapters, v.12.5.5, A04 Intel NIC drivers for W2K3 and W2K8 Server), but it's not taking when I try to install through the device manager. Any suggestions?
Don't install via Device Manager ... run the installer. Install the chipset drivers first - that should take care of your SMBus device, and without it, other drivers may not install properly:

This is most common if the download was corrupted.
Make sure that SATA Operation in the BIOS is NOT set to RAID ... in fact, set it to ATA.
That version of SBUU should work on a R210 II with 2003R2/SP2.
