I have the exact same issue. I receive the following error when I try to upgrade the BIOS to 1.11.1 as Administrator on Precision 5820 Tower X-Series: "Unable to load the SMBIOS Table"
I haven't managed to fix this issue on Windows. I tried removing, then reinstalling the SMBUS driver, tried different versions of the Intel chipset driver, tried Intel DSA, then a clean, offline reinstall of Windows to make sure no Intel driver is interfering via Windows Update, then manual installation of the latest Intel chipset drivers, different BIOS versions, nope, nothing worked.
But TIL that you can actually update the BIOS without Windows. Just put the update file on a FAT32-formatted USB drive, press F12 during boot (when the Dell logo is shown), select "BIOS Flash Update", browse to the update file, and that's it.
