Swap processor in 8920?
Is it possible to simply replace an i7-8700 processor with an i7-9700? or do I need to go to an XPS 8930?

The i7-9700 requires a 300 series chipset which the XPS 8920 (Z270 chipset) does not have, so you have to go to a XPS 8930.
