Try to go to Radeon Adrenalin ---> Performance ---> Settings ---> Manually and reduce the voltage to 900mV, and the GPU frequency to 2050-2100 MHz. In this case, the difference in performance will be an small, for some reason the temperature will drop significantly, as will the speed of the turntables. If necessary, I can throw off my saved profile with the settings.
Here are the temperature readings in the 3DMark stress test for 20 runs
With my R11 / 3090 I use MSI/afterburner’s custom fan curve it does a great job.
In AWCC I use the Thermal offset manually to control the case temps and set my Top Fan at around 48% and my Front fan around 46%. It may be a bit loud for some but I play with a headset Aw510H and a HP G2 so I don’t hear the fans. The stocks fans in my R11 move air really well and I like that more then the noise.
There's no reason to lower the cards performance, all you need is the undervolt. Also you want to raise the min clock to 100 under the max clock to have the most Stable performance on a 6800XT. I have an R12 and run an OC of 2400-2500mhz on the clocks. 1000mV on the voltage, 2100 vram and +15% power. I play fortnite as well and hitting 80c with everything on high is not even close to a big deal, but I only hit at most 75c because of the undervolt and the tuned fan curves

Manually tune the card, I have the 6800XT as well. Turn of zero rpm and undervolt from 1150 down to 1000-1050 which ever you find most stable

81*C for the GPU isn't unreasonable, considering the SFF design and all the high end components crammed into such a small case.
You can set up a custom fan curve with MSI afterburner to help with the GPU temps.
