Your intermittent multi monitor display and fan issue does not seem to be related to a dip in performance of cpu or gpu, both pretty good although not top notch for gaming in 2021.  If you are inflicted with poor fps during video intense gaming on high resolution monitors, an upgrade from Intel 8th to 10/11th gen cpu and GTX to RTX video card would make more sense.

If you are simply looking for a newer more reliable gaming rig, perhaps it is better to get a new gaming pc than upgrading components in R7.  Proprietary Dell power switch multi pin cable in R7 prevents you from upgrading to 10th gen Intel cpu motherboard combo.  
Since you can not upgrade motherboard easily, a possible upgrade for better gaming performance would be video card.  Quite a few options of video card more powerful than 1080 including RTX 3000 series card which would be future proof should you switch to new pc.  On the other hand Upgrade cpu from 8700 to 8700k on R7 board has little benefit.
