Why doesn’t Dell at least make these super expensive computers completely customizable?
Be sure you are looking at all the available base-configs. On second page should be a fully (mostly) configurable one.
Aurora-R7 is kinda small, so works best with just one nice video card (due to power and cooling).
If you want two in SLI, I suggest going with the Area-51. There is an Intel version and also an AMD one. Sounds like you know what you are doing, but if you want some config advice (or just a final double-check of config), just ask. I bought a "loaded" Aurora-R6 a year ago and we love it ... it's rock-solid stable and crazy fast.
On the Area-51 R5 sales page, we see four builds. Scroll down to VIDEO CARD. Two of the four builds has this notation, "See more options". Clicking that shows us Single, Dual, and Triple video card configurations. You have to then click the green "Customize & Buy" button
which takes you here to see all the available Dual and Triple video card options.
