To hook up your E510 power supply to a 6800GS, which requires the 6-pin PCI-Express power connector, you need the top two cables listed on this page.  The top one is the Y-splitter for a standard 4-pin power connector, it is $5.19 .

The second cable converts from 4-pin to 6-pin PCI-Express.  It is $2.99.

In all likelihood, your 6800GS card came with one or both of these cables.

Do I have the cables? If so, which one is the 4 pin and which is the 6?

As you can see in the photos, you certainly have the 4-pin (with 4 pins) to 6-pin (with 6 pins) converter.

However, you'll need to buy the Y-splitter for the 4-pins.  You'll connect it to (one of your) optical drives.

So, you need the $5.19 cable.  (Or about same price from your local computer guy or Radio Shack.)
