The first thing I would test is to turn off Windows Updates. Then remove the retail driver (assuming that is what you installed?) and reinstall the Dell OEM AMD FirePro W5000 driver. Reboot when done. Then retest. I would also test a single monitor on each of the AMD FirePro W5000 DP outs doing consecutive reboots.
When i first looked the drivers installed for the monitors were "generic" I installed the dell drivers but it still continued to change resolution on startups sometimes.. so I went and looked at the drivers to make sure they were working properly, and noticed the left hand monitor was back to saying "generic" for the driver, so it somehow rolls itself back. but i will try turning windows updates off.
