Found fix for this issue (as outlined in this article 6 ways to fix external monitor resolution issues on Macs ) to enable forcing resolution of external monitor using free tool Better Display app for macOS using "Set Resolution" option in BetterDisplay and selecting the same resolution as my primary Mac LCD monitor (in my case 2560x1440) but you can customize as you wish.

I am not sure if it makes a difference to the MacBook Pro, but we did not provide a macOS driver for the SE2722H. The optimal settings should be 1920x1080 60Hz using VGA and 1920x1080 60Hz or 75Hz using HDMI.

Your setup?
MacBook Pro USB-C --> USB-C to HDMI dongle --> HDMI to HDMI cable --> SE2722H HDMI in port

Does the macOS identify the SE2722H in its Display Settings?

I have the same problem with my brand new DELL P2772H monitor - unexpectedly poor resolution.

First setup using 'high speed 60 Hz' HDMI cable: Macbook Pro M1 -- USB-C Hub -- HDMI cable -- monitor. The resolution looked bad, so I switched to a direct cable setup: Macbook Pro M1 -- HDMI cable -- monitor.

Still bad, poor resolution.

The display settings are 1920x1080 at 60Hz refresh rate.

Any other tips? Would it work better with a different cable – eg VGA?

Pretty disappointed with this brand new purchase.

I have the same issue with the same monitor. Connecting directly with hdmi between my 14" macbook pro hdmi port and the monitor. 

I don't have the option in my display settings to change the resolution of the monitor to small text or commonly known on the Mac as "More Space". 

If I plug in any other monitor I have the ability to choose the size of the text in my display settings. I.e make everything smaller so that I have more screen real estate. 

The only option I have is to choose the resolution as 1920x1080 as the best option and I can't make anything smaller to give me more space on the screen therefore I have to return this monitor otherwise I'm wasting 27" of real estate. I may as well use a smaller 19" monitor as that's the amount of real estate it's giving me with large text like this.

And yes the Mac is picking up the monitor as Dell SE2722H. It's just not allowing me the options I'm used to when I plug in literally any other monitor.
