I will be guessing because we do not test on Apple proprietary hardware, ports, and software. You could also post on the Apple Discussions Forum and see if they can offer some insight or troubleshooting steps.

I think the Mac Mini has a TB (Thunderbolt) / mDP (Mini DisplayPort) out and an HDMI out?

Current setup =
Mac Mini TB/mDP out --> Dell U2715H mDP to DP cable --> U2715H DP in

Other scenarios to test =
Mac Mini TB/mDP out --> mDP to mDP cable --> U2715H mDP in
Mac Mini HDMI out --> HDMI to HDMI cable --> U2715H HDMI in

Unknown. As I said above, we do not test on Apple proprietary hardware, ports, and software. We would need you to test the monitor on a non-apple system to see if the issues were still present.

I tested all of the following cables scenarios:

1. Mac Mini HDMI out --> HDMI to HDMI cable --> U2715H HDMI in: can only drive 1920x1200 resolution

2. Mac Mini  mDP out --> mDP to HDMI cable --> U2715H HDMI in: can only drive 1920x1200 resolution

3. Mac Mini  mDP out --> mDP to mDP cable --> U2715H mDP in: monitor detects no signal and goes to sleep

4. Mac Mini  mDP out --> mDP to DP cable --> U2715H DP in: can drive monitor's max resolution (2560x1600), but shows buggy “blank out” behavior detailed in this thread
