You can only enable file and printer sharing as a package, but if you do not choose any folders to share, and your keep your shared documents folder (which is shared by default) empty, then file sharing will essentially be impossilbe.
If there are no shared files or folders, then they cannot be accessed by the other machine. Still, antivirus software should be running on all machines anyway.
