What you are requesting is referred to as an Online Capacity Expansion (OCE), which will allow you to add drives to an existing Virtual Disk to expand the capacity, as described here. In the case of the Raid 5 drive failing during reconstruction, while I don't think it would occur, that is why I would always recommend getting a complete backup of the data before ever doing anything with the raid.
