Is the OCR Program installed?
These are old pictures from a Dell 964 printer, I no longer own. The information should be similar.
At the top right, see more scan settings?

When opening the all in one screen to set the settings to PDF I don't have the tabs you are referring too.
Did you make sure to Update list of applications to send scans to and add Adobe Reader to the list?
Do you have the OCR Program installed?
Start, all programs, ABBYY FineReader 6.0 Sprint, ABBYY FineReader 6.0 Sprint
