If EmailXtender Audit Reports is enabled then you may be able to obtain the data you're looking for.
On the EX Server:
Start > Programs > EmailXtender Audit Reports
File > Open > Messages accessed by a user
Find the Admin in question and run the report.
Hope you find what you need.

Thanks. I found it - actually pretty easy to run - took me a bit to figure out what the report was telling me, but I figured it out.
