Some of them MAY be safely uninstalled, but I wouldn't suggest doing so unless you're absolutely sure what you're doing. There are some details at the link here.

Each time there is an automatic securtiy download from Microsoft, the uninstall info is stored in that folder. Yes, be careful on which ones to remove. You will notice at the end of those files there is a KB nbr associated with the update. Search the MS website on the KB to see what the security patch is referenced to.  Then you can decide to delete it or not.  FYI
