In IE go to Tools>Internet Options and see what the  Days to keep pages in history value is set at. Increase if necessary.

Sorry, my question wasn't very clear. I have it set to save the pages for 3 days, but is there a way to prevent them from being deleted if someone else uses my computer and clicks the delete history button?

There are programs available that can determine what sites have been visited, even if the history and temp files have been deleted. There are also some very well regarded programs for preventing other users, like your children, from visiting sites you'd rather they not. Some googling should help you find what you need.

Other than through sophisticated data recovery means or via a third party application, no.  If you can't trust them, don't let them use the PC.
