Can I install XP Pro so that XP is on one partition, Programs and data on another ?

I just got a new Dell 9300, and want to set up the partitons etc, and avoid those of the Dell freebie software (like AOL) that are of no use to me.
 
Potential easy reinstall of XP. 
Is is feasible and sensible to set up XP on C: and have all my applicaiton software and data on D: ?  My idea would be that I can reinstall XP every 6 months or so to clean it up, but leave the rest untouched.  (I am NOT prepared to reisatall XP and all software regularly.  I have too much software for that.) 
 
My documents etc
I have my own way of organising data files that makes it easy to back them all up, including the Outlook PST files.  I find the My Documents etc folders an aggravation.  Can I get rid of them?
 
Administrator as sole user?
I am the only user of the machine.  I have heard that my having an Administrator (me for program install etc) and a separate User (me for day-to-day use) reduces risk of virus attacks, since I would rarely be on line as the Admin, so it would be hard for any viruses to attack my software.   Is this benefit real and worth the complexity?
 
Nortin Antivirus etc 2005
I bought this with the Dell.  Is it the best to use?  (I had trouble with Norton 2005 on my old Dell 8000 under win 2000 pro, with Outlook Email)
