I recommend that you remove each VM's dependency on ISO attached, to have the mgmt and VM network continued on the secondary site for your case with stretched cluster, make sure that the precheck is with all Green components, not any warning or error, and the procedure will it's going very well, trust me. In the meantime, prepare the Licensing to move to vSphere 8, and ensure that the cluster with 2 FDs has DRS enabled during the update process. I wish you luck. (for everything you can go through VxRail SolVe Desptop to take more infos)

Everything stable, no errors, no problems itself with images, it depends on the existing cluster health, but at all the procedure runs smooth. With new update there is a ton of underline hardware firmware updates for 15G like idrac, bios, disk firmwares, network adapters, ISM, it just takes time. Im running on different 4node, 6node and stretched cluster environments, it takes 7-10 hours for my scenario, having more than 50VMs beeing migrated on 10G network.
