If memory serves me right, the display only comes with a dual link DVI and a miniDisplayPort to DisplayPort cable, but you can use the miniDisplayport connector on the display and the displayport connector on your GFX card and try again.
How did you connect the display? Most DisplayPort to DVI Adapters are single link DVI - you need one of the active ones (easily identified by having an USB input that needs to be connected to make it work), along with a dual link DVI cable.
And which of the two ports and which cable did you use? By the looks of it, the smaller connector (black) is DisplayPort so I'd go for that one - DisplayPort goes above 2560x1600 so you should be on the safe side. The DVI cable that comes with the screen is dual link, and the HD5xxx series should do dual link (at least my 5870 did when I had it.. but only one one of the two DVI ports), but DP is the safer bet.
I have an AMD Radeon HD 8570 in my Dell Optiplex 9020.
And I have an HP ZR2740w display (2560 x 1440).
The Radeon HD 8570 does not appear to support this resolution despite the fact that the specs claim it supports a max resolution of 2560x1600.
I switched some monitors around and found that the HD 8570 does support 1920 x 1200. The monitor works fine with my Mac so I know the monitor and cable (dual-link DVI) are fine.
The card may well support 2560x1600 - the questions is whether the DVI port is really a dual link DVI port. Far from all ports are. Screens that go beyond 1920x1200 and have a DVI port generally support the full resolution over DVI (4K displays excluded but I'm not aware of any that have DVI inputs), but it not only requires the screen and a dual link DVI cable, it also requires a dual link DVI output. That's why going DisplayPort simplifies things... there things only get tricky at 4K (not due to the fault of the displayport standard really, but since displays appear as two halves of a 4K display).

The irony is that my monitor came with a DisplayPort cable. I had what I needed to make this work all along and didn't realize it. I never thought to use it. I never used a DisplayPort cable before.
I am/was having a similar problem -- Optiplex 9020, Radeon HD 8570, using DVI port (with dual link DVI cable), I cannot get above 1920-1080 resolution. Thanks to this thread, I realized I, too, still had a DisplayPort cable from when my monitor shipped. Went and found it, now one monitor works great - 2560x1440.

Remaining problem is wanting to go dual monitor -- must we assume that the documentation from AMD is simply wrong? They show DVI as supporting up to 2560x1600. ( http://www.amd.com/us/products/desktop/graphics/8000/Pages/8570.aspx#2 )
Wondering if I'm going to have to buy another card if I want dual monitors at the higher resolutions.
